OH thats Spicey...Chicken Tortellini Casserole

Hard to believe it has been almost a month since I last shared a recipe or more like endeavor.  This one seriously is a staple in our household.  It is quick and easy...now everyone knows you can't go wrong with that. 

Bring on the Spicey Chicken Tortellini Casserole

Spicey Chicken Tortellini Casserole
8-10oz of Chorizo
1 pkg. Boneless Skinless Chicken Breast (approx. 1.5lbs)
2 pkgs refrigerated Tortellini Noodles (cheese flavor)
1-2 Jar(s) Salsa
1 small can green chiles diced
2 cups of cheddar cheese (or more if you really like cheese)
 
This is how we do it (aka directions)
1. Preheat the oven to 375 degrees
2. Cook up the chorizo and drain the fat.  After cooked it can be placed in a bowl to the side.

3. Cut up the chicken breast into cubes and cook.
 
4.  While cooking the meat, get the water boiling and cook up the tortellini noodles. Refrigerated tortellini noodles cook very quickly. Those things start to float you are set. Remember to sample though, just in case.  Of course, drain.


5. Once the chorizo, chicken breast, and tortellini noodles are cooked. Combine them in a bowl and lightly mix.

 
6. Add in Green Chiles and Salsa.  Then gently mix.
 
7.   Add cheese and mix.  Reserve about 1/2 c. of cheese for the top.

 
8. Dump into casserole dish sprinkle the remainder of the cheese on top.  Then bake until cheese is melted and casserole is warmed all the way thru.

 
 
And boom, there you have spicey chicken tortellini casserole.  Super easy and super delicious.
