Cupcakery - Red Velvet

Back again in a attempt to tempt those tastebuds of yours.   As you recall, I mentioned here Cupcakery - Chocolate the mission.  The mission if you accept it...cupcakes like It's a Sweet Life.

Second Attempt - Red Velvet Cupcakes made from scratch.
 
What the heck was I thinking.  Moving on.
Softasilk Cake flour...say what?!?  I had no idea that a special kind of flour existed until I found the recipe.  And notice the sour cream, um yeah that was going into the cake.
 
Turn out...good.  A little to dense for my taste.  Sweet life quality, not quite yet.
 
Here is the recipe:
 
INGREDIENTS
2 1/2 c. Cake Flour
1/2 c. unsweetened cocoa powder
1 t. baking soda
1/2 t. salt
1 c. butter, softened
2 1/4 sugar
4 eggs
1 c. sour cream
1/2 c Buttermilk
1 (1 ounce) bottle Red Food Coloring
2 1/2 t. Vanilla
 
1. Preheat the oven to 350. Mix flour, cocoa powder, baking soda and salt in bowl.  Set aside.
2. Beat Butter and sugar in large bowl with electric mixer until light and fluffy. Beat in eggs one at a time. Mix in sour cream, milk, food coloring (thats not a natural color), and vanilla. Gradually beat in flour mixture on low speed until just blended.  Note the word gradual here people, just don't dump and go that just creates a floury mess.
It's a bloody mess I tell you...poor red velvet meeting his end.
 
3. Spoon batter into paper lined muffin cups until 2/3 full.  Don't forget to sneak samples along the way.
 
4. Bake 20 minutes or until a toothpick comes out clean. Cool in pan on wire rack for 5 minutes and then remove and cool completely.
5.  Frost (recipe to come).
 
Boom...red velvet cupcakes.  And no finished product picture, Sorry.  They were good, got eaten and I forgot.  Just go make and eat some.
